The short answer: most truffle oil is olive or sunflower oil with an added aroma, not truffle. To make real truffle oil, warm 10 to 15 g of grated fresh truffle in 250 ml of mild olive oil at 100 °C for 2 to 3 hours, then strain it. Keep it in the fridge and use it within 4 days, or freeze it.
Open a bottle of supermarket truffle oil and the smell hits the room before the cap is off. That is the giveaway. Real truffle smells quieter: earthy, a little like garlic and wet forest floor. This guide shows you what is in the bottle, how to read the label in 10 seconds, and how to make an oil that tastes of the truffle you bought.

What is in a bottle of truffle oil
Most truffle oil is made with one aroma molecule, 2,4-dithiapentane. It is one of the compounds that give white truffle its smell, but in the bottle it is made in a lab, not taken from a truffle. A thin slice of truffle in the bottle does not change that. It is there for the photo.
That does not make it bad. It makes it a flavouring. If you like it, use a few drops. If you want the taste of a real truffle, you have to start with one.
How to read a truffle oil label
| The label says | What it means |
|---|---|
| Truffle aroma, truffle flavour, flavouring | An added aroma, usually made in a lab |
| Natural flavouring | An aroma from natural sources, not necessarily from truffle |
| Natural truffle flavouring | At least 95% of the aroma comes from truffle (EU rule) |
| Tuber melanosporum, Tuber aestivum, Tuber magnatum, and no aroma | Truffle is the only source of the taste |
Read the ingredients, not the front. The word truffle on the front is a name, not a promise.
Ingredients
- 10 to 15 g fresh black truffle, brushed clean
- 250 ml mild olive oil or sunflower oil
- A fine grater
- A clean jar with a lid
Black winter truffle (Tuber melanosporum) gives the deepest flavour. Summer truffle (Tuber aestivum) is milder and costs much less, so it suits a first batch.
How to make truffle oil with real truffle
- Grate. Grate the truffle finely straight into the Glass of the NOIDS Herb Lab. More surface gives more flavour.
- Add the oil. Pour in the oil. Stay under the MAX mark.
- Cover. Put the Dish Lid on and set the Glass firmly in the Main Body.
- Start. Turn the Rotary Control to Oil. The cycle holds 100 °C for about 120 to 180 minutes, within 1 °C, so the truffle never fries.
- Strain. When the Glass has cooled to a safe temperature, press the oil out with the Filter Set.
- Chill. Pour it into a clean jar, write the date on it and put it in the fridge.
Truffle aroma fades with heat and time. For the top note, grate a little fresh truffle over the dish as you serve it. The how to use page shows every step of the machine.
No Herb Lab? Warm the oil and truffle in a small pan on the lowest heat for 10 minutes, take it off the heat and let it steep for 1 hour. Watch it the whole time: if it sizzles, it is too hot.
How long truffle oil keeps
- Homemade, with fresh truffle: fridge only, in a closed jar. Use it within 4 days.
- Freezer: freeze it in an ice-cube tray, then bag the cubes. Use within 3 months.
- Shop-bought truffle oil: follow the label. It is made with an aroma, not fresh truffle.
Truffle is a low-acid food. Under oil, at room temperature, it can grow the bacteria that cause botulism, and you cannot smell or taste them. The rule is the same as for garlic or herbs in oil: fridge, 4 days, or freeze. Chili oil follows a different rule; this guide explains why.
How to use truffle oil
- Pasta: a teaspoon over buttered tagliatelle with parmesan.
- Eggs: a few drops on scrambled eggs, just before serving.
- Risotto: stir in a teaspoon off the heat.
- Chips and popcorn: toss them while hot, with flaky salt.
- Mushroom soup: a few drops on top of each bowl.
- Mashed potato: fold in a spoonful at the end.
Use it to finish, not to fry. Heat takes the aroma away. For a spread, make truffle butter with the same truffle. Looking for a present for a cook who has everything? See our gifts for cooks.
Questions
Is truffle oil made from real truffles?
Most is not. It is oil with an added aroma, often 2,4-dithiapentane made in a lab. Look for truffle in the ingredients and no aroma or flavouring.
Why do some chefs dislike truffle oil?
Because the added aroma is louder and flatter than real truffle, and it tastes the same on every plate. Real truffle is quieter and changes with the dish.
How much truffle do I need for truffle oil?
10 to 15 g of fresh truffle for 250 ml of oil. Summer truffle is a good start; black winter truffle gives the deepest taste.
How long does homemade truffle oil last?
4 days in the fridge, or 3 months frozen in an ice-cube tray. Never keep it at room temperature.
Can I cook with truffle oil?
Use it to finish a dish, not to fry. Heat fades the truffle aroma, so add it at the end.
