A butter infuser is a sealed vessel that holds butter at an exact temperature while whole botanicals give up their flavour into the fat, then strains the result without losing a third of it to a cloth. It is the difference between a batch you measured and a batch you hoped about.

Butter is the hardest fat to infuse well and the easiest to ruin. It scorches, it separates, it browns while you are looking at something else, and it carries the smell of whatever you put in it straight through the house. What matters in a butter infuser

  • A held temperature, not a hot plate. The window where butter takes on flavour without browning is narrow, and a pan on a hob crosses it every time you look away.
