The short answer: to make garlic-infused olive oil, warm sliced garlic in olive oil on the lowest heat for 15 to 20 minutes until the garlic is pale gold, then strain it. Keep the oil in a closed jar in the fridge and use it within 4 days, or freeze it. Never store homemade garlic oil at room temperature.
A spoonful of garlic-infused olive oil gives pasta, eggs, roast vegetables and bread a soft garlic flavour without any raw bite. It is quick to make. The one part that needs care is storage, because garlic in oil is a known food-safety risk when it is kept warm. Below: two methods, the right ratios, and the simple rules that keep your oil safe.
| At a glance | |
|---|---|
| Time | 25 minutes in a pan, or 2 to 3 hours hands-off |
| Ratio | 6 to 8 garlic cloves per 250 ml (1 cup) oil |
| Heat | Lowest setting: tiny bubbles, never frying |
| Keeps | 4 days in the fridge, 3 months in the freezer |
Ingredients
- 250 ml (1 cup) olive oil: a mild one works best
- 6 to 8 garlic cloves, peeled and thinly sliced
- Optional: a sprig of dried thyme or rosemary, a few black peppercorns, 1 dried chili
Which oil? A mild olive oil lets the garlic lead. A strong, peppery extra virgin oil can turn bitter with long heat. For a neutral garlic oil, use sunflower or rapeseed oil.
How to make garlic-infused olive oil in a pan
- Slice. Slice the garlic thinly and evenly, so every slice cooks at the same rate.
- Combine. Put the garlic and the cold oil in a small saucepan together. Starting cold gives a gentler, sweeter flavour.
- Warm gently. Set the pan on the lowest heat. You want tiny, lazy bubbles around the garlic, never a sizzle.
- Watch the colour. After 15 to 20 minutes the garlic turns pale gold and smells sweet. Take the pan off the heat before it browns, because brown garlic tastes bitter.
- Strain. Let the oil cool for a few minutes, then pour it through a fine sieve into a clean jar.
- Chill. Close the jar and put it in the fridge within an hour.

Slow-infused garlic oil with the NOIDS Herb Lab
If you want a deeper, rounder garlic flavour without standing at the stove, infuse it slowly. The NOIDS Herb Lab Oil function holds 100 °C (212 °F) for you, so the garlic can never catch or fry.
- Put the sliced garlic and the oil into the Glass. Stay under the MAX mark.
- Cover the Glass with the Dish Lid and place it firmly in the Main Body.
- Turn the Rotary Control to Oil. The cycle runs for about 120 to 180 minutes, then cools by itself.
- Once the Glass has cooled to a safe temperature, strain the oil with the Filter Set into a clean jar.
- Store it in the fridge, exactly like the pan version.
How to store garlic oil safely
This is the part that matters most. Garlic is a low-acid vegetable. Under oil, there is little oxygen. In those conditions, Clostridium botulinum bacteria can grow at room temperature and make a toxin. You cannot see, smell or taste it, and heating the garlic first does not make the oil safe to keep warm. Oregon State University Extension gives these rules for homemade garlic in oil:
- Fridge: keep it in a clean, closed jar and use it within 4 days.
- Freezer: freeze it in an ice-cube tray, then keep the cubes in a bag for up to 3 months. Use them straight from frozen.
- Never keep homemade garlic oil in the cupboard, and never give it as a shelf gift.
- Oil turns cloudy and thick in the fridge. That is normal. A spoonful clears in a minute at room temperature.
What about shop-bought garlic oil? Commercial garlic oils are made with acidified garlic or other controlled processes that a home kitchen cannot copy. Follow the label on those.
Ways to use garlic oil
- Toss with hot spaghetti, chili flakes and parsley.
- Brush on bread before toasting.
- Fry eggs in it.
- Drizzle over roast potatoes, hummus or soup.
- Whisk into a dressing with lemon juice and salt.
Common mistakes
- Too much heat: the garlic browns in seconds and the oil turns bitter. Use the lowest setting.
- Raw garlic left in a bottle: whole cloves in a pretty bottle on the counter look nice but are the riskiest way to keep garlic oil.
- Making too much: 4 days goes quickly. Make a small jar and freeze the rest.
The same storage logic applies to other fresh ingredients in oil. Our guide to herbal oil infusions covers dried herbs, and choosing the right oil or butter explains which base suits which dish.
Questions
How long does homemade garlic-infused olive oil last?
4 days in a closed jar in the fridge, or about 3 months in the freezer. Do not keep it at room temperature.
Is homemade garlic oil safe?
Yes, when you keep it cold. Garlic in oil can grow botulism bacteria at room temperature. Keep it in the fridge and use it within 4 days, or freeze it.
Can I use dried garlic instead of fresh?
Yes, and the flavour is a little toastier. It does not change the storage rule: oil with dried garlic also goes in the fridge for up to 4 days, or in the freezer.
Why does my garlic oil taste bitter?
The garlic got too hot and browned. Next time use the lowest heat and take it off as soon as the slices turn pale gold.
Can I leave the garlic in the oil?
You can, as long as the jar lives in the fridge and you use it within 4 days. Straining it out makes a cleaner oil that is easier to pour.
